InstantPot Lentils

IP Lentil

Lentils are an incredibly versatile food, and can be used in a variety of dishes. They can be cooked in soups, stews, salads, and even desserts. They can also be used as a side dish or as a replacement for meat in vegetarian dishes. For those looking to get the most health benefits from lentils, it is important to cook them properly. Soaking lentils overnight before cooking can help to make them more digestible and reduce the cooking time. This recipe utilizes a pressure cooker to make this a quick dish, and you don’t have to soak the lentils beforehand.

Lentils are an incredibly healthy and versatile pulse that have been used in cooking for centuries. They are a type of legume, and are high in fiber, protein, and other essential nutrients. The health benefits of lentils are numerous. They are an excellent source of plant-based protein, providing essential amino acids that are important for growth and repair. They are also a great source of dietary fiber, helping to keep your digestive system healthy and regular. Lentils also contain essential vitamins and minerals, including folic acid, iron, and magnesium. In addition to their nutritional value, lentils are very low in fat and can help to lower cholesterol levels. They also contain phytochemicals, which are compounds that may help reduce the risk of certain diseases, such as cancer and heart disease.

I love lentils! They are aromatic, healthy but feel hearty, make a great lunch or dinner in between all the rich holiday food. It’s a winter staple for me. Using a base of mirepoix and adding my Middle Eastern 7 Spice Blend (ME7) give this dish so much flavor and depth. I like to top it with either labneh, yogurt or sour cream, mixed with ME7.

Lentil soup:

4 Tablespoons Mojo Garlic Sauce

1 Onion, diced

2 Celery stalks, diced

2 Carrots, diced

2 Tablespoons, ME7

8 ounces dried Lentils (green or brown)

4 cups Stock (Veggie, Chicken, or Beef)

Set IP to sauté . Once hot, add mojo and cook for 30 seconds.

Add onions, carrots, celery and bay leaf. Stir and cook for 3-4 minutes, then add ME7. Once coated, mix in lentils. Stir to combine then add 4 cups of stock.

Set IP to Beans setting at High Pressure for 15-20 minutes.

If you want to bump up your veggies add spinach at the end of cooking and simmer for 5 minutes.
