This recipe utilizes a pressure cooker to make this a quick dish, and you don’t have to soak the lentils beforehand.

I love lentils! They are aromatic, healthy but feel hearty, make a great lunch or dinner in between all the rich holiday food. It’s a winter staple for me. Using a base of mirepoix and adding my Middle Eastern 7 Spice Blend (ME7) give this dish so much flavor and depth. I like to top it with either labneh, yogurt or sour cream, mixed with ME7. 

 

Lentil soup:

 

4 Tablespoons Mojo Garlic Sauce

1 Onion, diced

2 Celery stalks, diced 

2 Carrots, diced 

2 Tablespoons, ME7

8 ounces dried Lentils (green or brown)

4 cups Stock (Veggie, Chicken, or Beef)

 

Set IP to sauté . Once hot, add mojo and cook for 30 seconds. 

Add onions, carrots, celery and bay leaf. Stir and cook for 3-4 minutes, then add ME7. Once coated, mix in lentils. Stir to combine then add 4 cups of stock.

 

Set IP to Beans setting at High Pressure for 15-20 minutes. 

 

If you want to bump up your veggies add spinach at the end of cooking and simmer for 5 minutes.
