Creamy Pumpkin and Carrot Soup

- 2 cups pumpkin puree (canned or homemade)

- 1 cup diced carrots

- 1 small onion, chopped

- 2 tablespoons, Mojo Garlic Sauce

- 4 cups vegetable broth

- 1 cup coconut milk

- 2 tablespoons Mama Milly's Middle East 7 Spice blend

- Salt and pepper, to taste

- Pumpkin seeds and fresh thyme leaves (for garnish)



1. In a large pot, sauté chopped onion and Mojo Garlic Sauce until fragrant and slightly softened.


2. Stir in Mama Milly's Middle East 7 Spice blend, coating the onions and garlic evenly.


3. Add diced carrots to the pot and cook for 5 minutes until they start to soften.


4. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for about 15-20 minutes or until the carrots are tender.


5. Add the pumpkin puree and coconut milk to the pot. Stir to combine all the ingredients.


6. Using an immersion blender or in batches in a regular blender, puree the soup until smooth and creamy.


7. Season with salt and pepper to taste. Serve the creamy pumpkin and carrot soup hot, garnished with pumpkin seeds and fresh thyme leaves.
