Slow Cooker Pulled Pork

 

This recipe could not be easier! If you don't eat pork you can substitute a beef roast or chicken breasts.

 

2 pounds pork butt

1 cup BBQ sauce*

2 Tablespoons Adobo

3 Tablespoons BBQ Dry Rub

 

 

*Can make BBQ sauce or use your favorite bottled brand. Can be adapted for keto, substitute stevia for sugar.

  • ⅔ cup ketchup 
  • ½ cup apple cider vinegar
  • ¼ cup honey 
  • 1 Tablespoon BBQ 
  • 2 Tablespoons mojo Garlic Sauce 

 

Combine all ingredients in a small saucepan, bring to a simmer over medium heat and cook for 5 minutes.)

 

SC Pork Instructions 

In a small bowl combine the adobo and BBQ dry rub. Coat this mixture in all sides of the pork butt. Place seasoned pork into a slow cooker. Pour 1 cup of BBQ on top and set to low, cook for 7-8 hours or high for 4-5 hours. 

 

Once cooked, shred with 2 forks and stir back into the juices. Add additional BBQ sauce if desired.
