Recipe: Tomato, Goat Cheese, and Arugula Salad

The bitterness of arugula pairs well with the tartness of goat cheese and balanced by the fresh crunch of cucumbers and sweet, summer-ripe tomatoes.

Garlic bread is a great accompaniment for this salad. Just take your bread of choice, brush Mama Milly’s Mojo Garlic Sauce on top, and toast! 

Looking for more protein? This salad would also go well with shrimp, salmon, chicken, or pork chops. Tip: Just add mojo and a spice blend of your choice to marinate your protein of choice! 

 

Ingredient List:

- 4 cups fresh arugula

- 1 cup of tomatoes, any variety (cut into bite-sized pieces)

-1/2 cup cucumber, diced

- 1/4 cup fresh basil leaves, torn

- 1/4 cup toasted pine nuts or pistachios

- 4 ounces goat cheese, crumbled

- Salt and pepper to taste

 

For the Dressing:

- 2 tablespoons Mojo Garlic Sauce

- 2 tablespoons balsamic vinegar

- 1 tablespoon honey

- Salt and pepper to taste

 

Instructions:

 

1. In a large salad bowl, add the arugula, cherry tomatoes, cucumber, basil leaves, and toasted pine nuts. Toss lightly to combine.

 

2. In a small bowl, whisk together the Mojo Garlic Sauce, balsamic vinegar. Taste and adjust the seasoning with salt and pepper, if needed.

 

3. Drizzle the dressing over the salad ingredients in the large bowl. Use tongs or salad servers to gently toss and coat the ingredients evenly with the dressing.

 

4. Sprinkle the crumbled goat cheese over the salad. 

 

5. Serve the salad immediately as a refreshing summer appetizer or side dish. Enjoy!

 

Note: Feel free to add grilled chicken, shrimp, or roasted vegetables to make it a more substantial meal if desired.
