Recipe: Belinda's Black Eyed Peas
Belinda’s Black Eyed Peas:
Ever since I have known her (over 30 years!), my stepmother, Belinda, has made stewed Black Eyed Peas at New Years. It’s a good luck tradition passed along to her from her Southern Roots in Virginia, and is popular in the African-American community. My Father’s birthday is on January 1st, so if we eat at home, no matter what the dinner is, there’s a side of black eyes peas so we can all have luck for the upcoming year.
Black-eyed peas have been considered a symbol of good luck and prosperity for centuries. The legume is said to bring in wealth and good fortune for the New Year. Eating them on New Year’s Day is thought to bring a year of abundance and prosperity. The tradition of eating black-eyed peas dates back to ancient times, when they were considered a sign of good luck. They are also said to bring luck due to their resemblance to coins.
This recipe is a good one for a pressure cooker or InstantPot!
Ingredients:
- 2 cups of dried black eyed peas
- 2 tablespoons of garlic mojo sauce
- 1 onion, diced
- 1 tablespoon Adobo
- 1 teaspoon Veggie Blend
- 2 cups of vegetable broth
- 2 tablespoons of freshly chopped parsley for garnish
Instructions:
*1. Soak the black eyed peas overnight in a large bowl of water.
*2. Drain the peas and set aside. (*Skip 1-2 if you use the instant pot)
3. Heat the oil in a large pot over medium-high heat.
4. Add the onion and garlic mojo and sauté for 203 minutes, until the onion is softened.
5. Add the Adobo and Veggie Blend, stir to combine .
6. Add the vegetable broth to the pot, add salt, and black pepper to taste and bring to a boil. 7. Add the drained black eyed peas and reduce the heat to low.
8. Simmer the peas for at 80-90 minutes, until they are tender and thick. If using a pressure cooker, cook on high for 30-40 minutes. If you like a thicker consistency, set on simmer for additional 10 minutes after pressure cooking.
9. Remove from heat and stir in the freshly chopped parsley.
10. Serve and enjoy!
