Thanksgiving Leftover Recipe: Turkey Soup

Really, just like chicken soup, but you’re using your Thanksgiving leftovers! I like adding stuffing as a topper to the soup. You can make the soup in a slow cooker or Instant pot too!
  • 4 cups Turkey Stock
  • 3 cups of leftover turkey
  • 1/4 cup Mojo Garlic Sauce
  • 1 onion, diced
  • 3 stalks celery, diced
  • 2 carrots, diced
  • 1 Bay leaf
  • 1 T. Adobo
  • 1 T. Veggie Blend
  • 1 cup egg noodles
Salt & Pepper to taste
Garnish: Leftover Stuffing
Instructions:
  • In a dutch oven, over medium heat, add the mojo, onion, celery, carrots, and bay leaf.  Sauté for 3-4 minutes until the onions are translucent.  Add the leftover turkey, adobo, and veggie blend.  Let this heat through and add the turkey stock.  Once boiling, add the egg noodles. Lower the flame and let the soup simmer for 30 minutes.
When you’re ready to eat, serve in a crock/ramekin and top with leftover stuffing, then broil on high for 2 minutes.
