Thanksgiving Leftover Recipe: Breakfast Stuffing Cakes
Stuffing can be transformed into savory cakes, perfect to top with a nice jammy yolk egg and breakfast meat of your choice. Drizzle with maple syrup for a sweet/savory combo!
- 1 1/2 cups Leftover stuffing
- 1 Egg, beaten
- 1/2 cup all-purpose Flour
In a medium mixing bowl, combine all ingredients until throughly mixed. Either make patties by hand or use a scoop, using approximately 1/4 cup of the mixture. I prefer thinner patties so that they can get crispy, so would use about 1/4 cup of the mixture. You can make it smash style— just make a ball and flatten it when it’s already in the pan!
Cook for about 2-3 minutes on each side until they are golden brown.
Pair with bacon or breakfast sausage and fried or scrambled eggs.. want more veg for breakfast? Eat leftover salad, or sauté some spinach with mojo garlic sauce.
